Chicken Hashweh

 

Ingredients:

Chicken:

  • 4-5 pound chicken
  • 1/2 tsp salt
  • 1/2 paprika
  • 1 tsp coriander
  • 1 tsp tumaric
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1 can chicken broth

Rice:

  • 2 tbsp ghee
  • 1 cup rice
  • 1 cup water
  • 1 cup chicken broth
  • 1/4 tsp cinnamon
  • 1/4 tsp cumin
  • 1/2 cup ground beef
  • 1/8 cup pine nuts
  • 1/8 cup sliced almonds
  • 1/8 cup pistachio
  • 1 clove garlic

Directions:

Chicken:

  1. Dry chicken thoroughly
  2. Rub chicken in olive oil and dry rub
  3. Let sit in fridge for 2 hours
  4. Broil for 20 minutes to make skin crispy
  5. Put in crock pot with chicken broth
  6. Cook for 3.5 – 4 hours

Rice:

  1. Saute meat in sauce pan with ghee
  2. Once meat starts to brown add garlic and nuts
  3. Once nuts start to toast add chicken broth and water and bring to a boil
  4. Add rice and reduce heat
  5. When water starts to reduce add cinnamon and cumin
  6. Cover and simmer until water evaporates

Spread rice on platter dish and top with pulled chicken.
