
Ingredients:
Chicken:
- 4-5 pound chicken
- 1/2 tsp salt
- 1/2 paprika
- 1 tsp coriander
- 1 tsp tumaric
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 1 can chicken broth
Rice:
- 2 tbsp ghee
- 1 cup rice
- 1 cup water
- 1 cup chicken broth
- 1/4 tsp cinnamon
- 1/4 tsp cumin
- 1/2 cup ground beef
- 1/8 cup pine nuts
- 1/8 cup sliced almonds
- 1/8 cup pistachio
- 1 clove garlic
Directions:
Chicken:
- Dry chicken thoroughly
- Rub chicken in olive oil and dry rub
- Let sit in fridge for 2 hours
- Broil for 20 minutes to make skin crispy
- Put in crock pot with chicken broth
- Cook for 3.5 – 4 hours
Rice:
- Saute meat in sauce pan with ghee
- Once meat starts to brown add garlic and nuts
- Once nuts start to toast add chicken broth and water and bring to a boil
- Add rice and reduce heat
- When water starts to reduce add cinnamon and cumin
- Cover and simmer until water evaporates
Spread rice on platter dish and top with pulled chicken.
