Ingredients:
- 9″ pie crust
- 6 oz. mushrooms
- 1 shallot
- 4 oz. spinach
- 1/4 lb swiss cheese
- 1/4 lb havarti cheese
- 2/3 cup heavy cream
- 5 eggs
- Salt and pepper
- 1/2 tsp nutmeg
- 1/2 tsp garlic powder
Directions:
- Bake pie crust in pan for 10 minutes at 350 degrees
- While pie crust bakes, saute shallot, mushrooms and spinach with herbs until tender
- Mix vegetables, cheese, eggs and cream in bowl
- Put mixture into pie crust
- Cover foil with crust so it doesn’t burn and bake for 40 minutes
- Let sit for 10 minutes and serve
