Mushroom and Spinach Quiche

Ingredients:

  • 9″ pie crust
  • 6 oz. mushrooms
  • 1 shallot
  • 4 oz. spinach
  • 1/4 lb swiss cheese
  • 1/4 lb havarti cheese
  • 2/3 cup heavy cream
  • 5 eggs
  • Salt and pepper
  • 1/2 tsp nutmeg
  • 1/2 tsp garlic powder

Directions:

  1. Bake pie crust in pan for 10 minutes at 350 degrees
  2. While pie crust bakes, saute shallot, mushrooms and spinach with herbs until tender
  3. Mix vegetables, cheese, eggs and cream in bowl
  4. Put mixture into pie crust
  5. Cover foil with crust so it doesn’t burn and bake for 40 minutes
  6. Let sit for 10 minutes and serve
