Ingredients:
- 1 (16 ounce) canned black beans, drained
- 1/2 red bell pepper
- 1/2 cup quinoa
- 1 cloves garlic, peeled
- 1/2 teaspoon cayenne pepper
- 1 teaspoon coriander
- 1 teaspoon tumaric
- Salt and pepper to taste
- 1/2 cup plain bread crumbs
Directions:
- In a saucepan, cook black beans along with cayenne pepper, coriander, tumaric and salt until water is gone (approx. 15 minutes)
- In food processor, combine bell pepper and garlic and chop
- Once chopped, put into mesh strainer to drain water
- Mash cooked black beans in food processor and combine in mixing bowl with bread crumbs, bell pepper and garlic and set aside
- Cook quinoa and add to the mixing bowl that holds the black beans, bell pepper and garlic
- Flatten into patties
- Heat oil in cast iron skillet and cook burgers for 3 minutes on each side
