Black Bean and Quinoa Burger

Ingredients:

  • 1 (16 ounce) canned black beans, drained
  • 1/2 red bell pepper
  • 1/2 cup quinoa
  • 1 cloves garlic, peeled
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon coriander
  • 1 teaspoon tumaric
  • Salt and pepper to taste
  • 1/2 cup plain bread crumbs

Directions:

  1. In a saucepan, cook black beans along with cayenne pepper, coriander, tumaric and salt until water is gone (approx. 15 minutes)
  2. In food processor, combine bell pepper and garlic and chop
  3. Once chopped, put into mesh strainer to drain water
  4. Mash cooked black beans in food processor and combine in mixing bowl with bread crumbs, bell pepper and garlic and set aside
  5. Cook quinoa and add to the mixing bowl that holds the black beans, bell pepper and garlic
  6. Flatten into patties
  7. Heat oil in cast iron skillet and cook burgers for 3 minutes on each side
