
Ingredients
- 1 1/2 cups dried chickpeas
- 1/2 cup water
- 2 tbsp tahini
- 1 large clove garlic
- 1/2 tsp baking soda
- 1/4 tsp citric acid
- Salt
Directions
- Soak chickpeas in a pot of water with baking soda overnight
- Drain water from chickpeas and fill pot with new batch of water
- Bring water to a boil and let chickpeas simmer until tender (about 60 minutes). You can also cook in pressure cooker for 30 minutes on high instead of using stove.
- Put chickpeas in food processor with water and garlic and blend
- Once smooth add tahini, citric acid and salt and continue to blend
- Taste hummus, may need to add water, tahini, citric acid or salt to adjust flavor and consistency
- Let cool and refrigerate overnight, serve next day. Also, note that hummus with thicken slightly in fridge overnight.
