Hummus

Ingredients

  • 1 1/2 cups dried chickpeas
  • 1/2 cup water
  • 2 tbsp tahini
  • 1 large clove garlic
  • 1/2 tsp baking soda
  • 1/4 tsp citric acid
  • Salt

Directions

  1. Soak chickpeas in a pot of water with baking soda overnight
  2. Drain water from chickpeas and fill pot with new batch of water
  3. Bring water to a boil and let chickpeas simmer until tender (about 60 minutes). You can also cook in pressure cooker for 30 minutes on high instead of using stove.
  4. Put chickpeas in food processor with water and garlic and blend
  5. Once smooth add tahini, citric acid and salt and continue to blend
  6. Taste hummus, may need to add water, tahini, citric acid or salt to adjust flavor and consistency
  7. Let cool and refrigerate overnight, serve next day. Also, note that hummus with thicken slightly in fridge overnight.
