Tzatziki

Ingredients:

  • 1.5 cups grated cucumbers (grate using large hole on box grater)
  • 1.5 cups Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp dill
  • 1 tbsp mint
  • 2 tsp lemon juice
  • 2 cloves minced garlic
  • 1/4 tsp salt

Directions:

  1. Squeeze grated cucumbers in hand to remove excess moisture and let sit in colander for 15 minutes covered with paper towel
  2. Combine all ingredients in bowl and mix until fully incorporated
  3. Refrigerate for at least three hours for best results
