
Ingredients:
- 1.5 cups grated cucumbers (grate using large hole on box grater)
- 1.5 cups Greek yogurt
- 1 tbsp olive oil
- 1 tbsp dill
- 1 tbsp mint
- 2 tsp lemon juice
- 2 cloves minced garlic
- 1/4 tsp salt
Directions:
- Squeeze grated cucumbers in hand to remove excess moisture and let sit in colander for 15 minutes covered with paper towel
- Combine all ingredients in bowl and mix until fully incorporated
- Refrigerate for at least three hours for best results
