Crab Cakes

Ingredients:

  • 1 large egg
  • 1/4 cup mayonnaise
  • 1 tablespoon chopped fresh parsley (or 2 teaspoons dried)
  • 2 teaspoons dijon mustard
  • 2 teaspoons worcestershire sauce
  • 1 tablespoons Old Bay seasoning (up to 1 and 1/2 teaspoons for a spicier kick)
  • 1 teaspoon fresh lemon juice,
  • 1/4 teaspoon salt
  • 1 pound fresh lump crab meat
  • 14 ritz crackers

Directions:

  1. Mix all ingredients except crackers and crab together in a bowl
  2. Add crab and crackers to mixture, gently mix, and refrigerate for at least an hour
  3. Form mixture into cakes that are roughly the size of a hockey puck
  4. Bake in oven at 450 for 10-12 minutes
