Ingredients:
- 4 cups (500 ml) all purpose or bread flour
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 cup ghee or neutral oil (plus additional for spreading)
- 1 1/4 cups (approx. 280 ml) warm water
Instructions:
- In stand mixer, add water, ghee, sugar, salt and mix well, slowly add flour to incorporate
- Knead to form a soft and sticky dough (about 5 minutes)
- Divide dough into 6 or 8 pieces and let it rest for 30 minutes
- Using a rolling pin, roll out dough into a circle.
- Roll the dough like you would a yoga mat and then coil it
- When all the dough has been coiled up , cover the dough with a damp cloth and let them rest for 20 minutes.
- Gently flatten out coiled dough and roll out. Begin rolling out the dough from the center working outwards.
- Rotate the dough out each time you roll it, this helps to make a perfect circle.
- Place dough in oiled pan.
- Heavily oil the other side of the dough making sure you oil the edges too.
- Cook for about 1-2 minutes per side until golden brown.
- Serve warm.
