Ingredients:
- 1 large red onion
- 1/4 cup sugar
- Salt
- 1/4 cup balsamic vinegar
- 2 tbsp canola oil
- 2 tbsp water
Directions:
- In a large pot, heat the oil until shimmering. Add the onions and cook over moderately high heat, stirring occasionally, until they start to brown.
- Add water to pan and let simmer until water is gone and onions are tender.
- Sprinkle the sugar over the onions and cook, without stirring, until the sugar melts.
- Stir sugar into onions and continue to let simmer for about a minute. Stir in the balsamic vinegar and simmer over low heat, stirring a few times, until the jam is thick, about 5 minutes. Season the jam with salt and let cool to warm.
