Caramelized Onion Jam

Ingredients:

  • 1 large red onion
  • 1/4 cup sugar
  • Salt
  • 1/4 cup balsamic vinegar
  • 2 tbsp canola oil
  • 2 tbsp water

Directions:

  1. In a large pot, heat the oil until shimmering. Add the onions and cook over moderately high heat, stirring occasionally, until they start to brown.
  2. Add water to pan and let simmer until water is gone and onions are tender.
  3. Sprinkle the sugar over the onions and cook, without stirring, until the sugar melts.
  4. Stir sugar into onions and continue to let simmer for about a minute. Stir in the balsamic vinegar and simmer over low heat, stirring a few times, until the jam is thick, about 5 minutes. Season the jam with salt and let cool to warm.
