Pan Seared Ribeye

Ingredients:

  • 1 pound boneless ribeye (1 1/2 inches thick)
  • 2 tbsp butter, softened
  • 1/2 shallot, chopped
  • 1/2 clove garlic, chopped
  • 1 tbsp fresh parsley
  • 1 tsp chives
  • 1/2 tsp sage
  • 2 tbsp rosemary
  • Vegetable oil
  • Salt

Directions

  1. Sprinkle ribeye with salt and let rest until it reaches room temperature (approx. 30 minutes)
  2. Heat oven to 225 degrees
  3. Put steak in oven for 30 minutes or until internal temperature hits 110 degrees
  4. Sear steak on stove top on high heat for 2 minutes on each side or until it reaches desired internal temperature (130 for medium rare)
  5. Add herb butter and rosemary to pan when there is 30 seconds left to cook, remove pan from heat and baste steak with sauce for remaining time.
  6. Remove steak from pan and rest for five minutes. Meanwhile, keep sauce warm in pan.
  7. Top steak with sauce and serve.

Herb Butter:

  1. Mix softened butter with shallots, garlic, parsley, sage and chives and create ball.
