Stuffed Pork Chop

Ingredients:

  • 2 bone-in pork chops
  • 1/2 cup cooked spinach
  • 1/4 lb shredded mozzarella
  • 1/2 cup white wine
  • 1 chopped shallot
  • Flour
  • 4 tbsp butter
  • 1 egg

Directions:

  1. Dredge pork chops in egg and flour
  2. In stainless steel skillet melt 2 tbsp butter and sear pork chops (3 minutes on each side)
  3. Once complete, slice pork chops horizontally
  4. Stuff pork chops with spinach and cheese
  5. Secure pork chop with toothpick to hold in stuffing
  6. Add shallots, white wine and butter to skillet and put pork chops back in skillet
  7. Spoon white wine sauce onto top of pork for 2 minutes
  8. Flip pork chops, cover and simmer for another 6 minutes
  9. Once done cooking, remove pork chops and let white wine sauce reduce by half
  10. Pour remaining white wine sauce onto top of pork chop
