
Ingredients:
- 2 bone-in pork chops
- 1/2 cup cooked spinach
- 1/4 lb shredded mozzarella
- 1/2 cup white wine
- 1 chopped shallot
- Flour
- 4 tbsp butter
- 1 egg
Directions:
- Dredge pork chops in egg and flour
- In stainless steel skillet melt 2 tbsp butter and sear pork chops (3 minutes on each side)
- Once complete, slice pork chops horizontally
- Stuff pork chops with spinach and cheese
- Secure pork chop with toothpick to hold in stuffing
- Add shallots, white wine and butter to skillet and put pork chops back in skillet
- Spoon white wine sauce onto top of pork for 2 minutes
- Flip pork chops, cover and simmer for another 6 minutes
- Once done cooking, remove pork chops and let white wine sauce reduce by half
- Pour remaining white wine sauce onto top of pork chop
