Mac and Cheese

Ingredients:

  • 3 Tbsp butter
  • 1 lb fresh pasta
  • 1/3 lb sharp cheese such as cheddar or dutch gouda
  • 1/3 lb mozzarella
  • 1 Tbsp flour
  • 1 cup half & half
  • 1 chopped shallot
  • Pepper to taste

Directions:

  1. Boil water in a sauce pan and add pasta
  2. Cook pasta until al dente
  3. While pasta boils, heat a sauce pan and add butter
  4. Melt 1 Tbsp butter and add minced shallots
  5. After 3-5 minutes, add rest of butter and flour to create a roux
  6. Once sauce thickens add half & half and pepper and bring to a simmer
  7. Slowly stir in the sharp cheese and mix until it melts (this cheese is harder than mozzarella and will take more time to melt)
  8. Once melted, stir in mozzarella until it melts
  9. Add pasta and serve
  10. Top with crushed black pepper
