
Ingredients:
- 3 Tbsp butter
- 1 lb fresh pasta
- 1/3 lb sharp cheese such as cheddar or dutch gouda
- 1/3 lb mozzarella
- 1 Tbsp flour
- 1 cup half & half
- 1 chopped shallot
- Pepper to taste
Directions:
- Boil water in a sauce pan and add pasta
- Cook pasta until al dente
- While pasta boils, heat a sauce pan and add butter
- Melt 1 Tbsp butter and add minced shallots
- After 3-5 minutes, add rest of butter and flour to create a roux
- Once sauce thickens add half & half and pepper and bring to a simmer
- Slowly stir in the sharp cheese and mix until it melts (this cheese is harder than mozzarella and will take more time to melt)
- Once melted, stir in mozzarella until it melts
- Add pasta and serve
- Top with crushed black pepper
